Esta historia me recuerda al comercio de trufas en europa y china. Las trufas son originalmente de una region de Francia, pero ahora son cultivadas en el Reino Unido, los Estados Unidos, España, Suecia, Nueva Zelanda, Australia, Chile y Sudáfrica. Consideradas por un gastrónomo francés ser “el diamante de la cocina,” las trufas tienen una historia muy parecida a la de la miel. Dado el valor de las trufas y la demanda en la cocina internacional, no es sorprendente que otros países han intentado de reproducir las condiciones en que las trufas crecen mejor. Sin embargo, los imitadores no se preocupan de la pureza del producto y en lugares como China, han creado especies híbridas que están confudidas a menudo con las auténticas. No me afecta mucho, me gustan las trufas pero no las comen muy seguido y no cocino con ellas nunca, pero para las chefs franceses es una bastardización de su arte.
