Los hongos

Después de leer el artículo sobre los hongos, decidí que sería una buena idea comer más, no porque estoy convencida de que tienen propiedades medicinales, pero porque son nutritivos. Tienen vitaminas D y B, aminoácidos esenciales, fibra y minerales. También tienen betaglucanos, algo que ni sabía existido. Descubrí que betaglucanos son carbohidratos complejos y ayudan a reducir los niveles de colesterol malo en la sangre y también tienen beneficios en el sistema inmunológico porque actúan favorablemente sobre el microbioma intestinal.

Necesito aprender más de los tipos diferentes de hongos. Solamente conozco champiñones Portofino, champiñones botones y cremini, setas de ostra y hongos enoki. Mientras leía sobre los hongos, vi una foto de hongos melena de león. Ellos parecen muy fascinantes, como si sean criaturas marinas. Lo que es irónico, es que, supuestamente, saben como mariscos. De hecho, frecuentemente, sustituyen cangrejo y langosta en recetas sin carne. Pero puedes comerlos salteados con aceite de oliva. ¡Suena delicioso!
