Me gusta leer sobre el concepto de crear "un fuerte sentido del lugar" por la comida. Ziska dijo que el plato debe decirte "dónde estás en el mundo" y este concepto es muy poderoso, especialmente en un lugar tan único como el Ártico. Creo que en nuestro sistema hoy en día de comida producida en masa este sentido ha estado perdido. Ahora se puede comer cosas por encargo y la comida más lenta es rara. Por esta razón me gusta ir a mercados de agricultores o restaurantes que usan ingredientes locales. Sin embargo, sé que este tipo de consumo es un privilegio. No es tan lujo como el restaraunte Koks pero las ofertas de comida locales a veces son más caras como el Mcdonalds o los restaurantes así. Necesitamos crear una manera de democratiza la comida que ofrece "un sentido del lugar."
